Countdown To Turkey

I have made the brine for my turkey to soak in. I have made the compound butter to glaze the turkey with before it goes into the oven. I have made 2 skillets of cornbread for dressing, they're on my kitchen table behind me resting on cookie racks. I have filled 8 quart sized freezer bags 2/3 full with water and set them to freeze so that the turkey stays chilled in brine. (I use blocks of ice in bags for 2 reasons - a block takes longer to melt, and the water stays in the bag and prevents unnecessarily diluting the brine)

Tomorrow I'm brining the turkey, making roux for gravy, baking the hazelnut brown butter cake, and making the dark chocolate espresso ganache for draping the cake once it cools down. Yellow arrives tomorrow evening for the rest of the week, and on Thursday morning I'll be finishing the dressing, roasting the turkey, and making gravy. Then we pack up the car and head over to Grandmommy's for dinner!
